Can you believe 2016 is almost over?! This was a huge year for my family with the birth of our baby girl and time has just flown by! We will be ringing in the new year from home this year with this festive champagne cocktail that is perfect for New Years Eve! It’s a take on the French 75 made with champagne and gin. The blackberry puree adds the perfect amount of fruity sweetness and turns the drink a beautiful reddish color. Check out the recipe below!
WHAT YOU NEED
- 1 Bottle Brut Champagne
- Your favorite Gin (I used Hendricks)
- Blackberry simple syrup (recipe follows)
- Mint and blackberries for garnish
BLACKBERRY SIMPLE SYRUP
- 6 oz. blackberries (leave a few out for garnish)
- 3/4 cup sugar
- 1/4 water
WHAT TO DO
Bring the berries, sugar, and water to a boil, stiring frequently until the sugar dissolves. Reduce heat and simmer until the berries are soft (about 15 minutes). Remove from heat and pour through a mesh sieve to remove any solids. Once the mixture cools, pour about a tablespoon in the bottom of each glass. Add 1 oz. of gin and fill the rest of the glass with champagne. Add fresh blackberries and mint for garnish.
If you aren’t really into gin, you can leave that out for more of a Blackberry Bellini type drink. I’m also curious to try this with other fruit…I’m thinking strawberries! Leave a comment if you give this drink a try and let me know how you liked it! Happy New Year and remember, drink responsibly! 🙂
