Funny thing is this recipe totally happened by accident. When I originally set out to make this recipe, I was going for more of a trifle type thing. Right in the middle of baking my angle food cake, the oven just stopped working. Yep. Just shut off and wouldn’t come back on. So I had a ton of berries and whipped cream, but no cake, and no oven. My husband pretty much saved the day when he ran to the bakery and came back with a lemon pound cake ready to go! That is pretty much how the easiest summer dessert came to be. Needless to say, our new oven will be getting installed tomorrow. I can’t wait to be able to finally bake again!
What You Need
- 1 premade angel food cake, or pound cake (I used lemon pound cake)
- 1 tub whipped cream
It seriously takes like 10 minutes to put this cake together. I started by cutting the cake in half. Next, I just started layering on the whipped cream on the bottom half. I may have gone a little over board with the whip, but I didn’t hear anyone complaining! The last step is to add the strawberries and blueberries. I also added a little mint to bring some freshness! I love berries and mint together. This cake definitely didn’t disappoint. The blueberries and strawberries make it extra festive for the 4th of July, but really it’s perfect for any occasion this summer! I love how it looks fancy, but really couldn’t be any simpler to make! Those are my favorite kind of recipes!
